This recipe is from Jenny, one of our Veg Angels. It’s very simple and doesn’t involve pre-cooking the rhubarb.
Wash the rhubarb and chop into 2-3cm pieces. Put into an ovenproof dish and stir in the sugar.
For the crumble, place the flour and butter in a large bowl. Rub the butter into the flour until the mixture has the consistency of breadcrumbs. Gently stir in the sugar.
Tip the crumble mixture over the fruit in the ovenproof dish and bake at 180C for approximately 40 mins or until the crumble is golden brown and the fruit is bubbling below.
Serve with cream, custard or ice cream.
